For me everything started forty years ago in Brittany, this difficult but oh so endearing land where I was born.
Even if child I didn’t imagine to embrace this career, I was always sensitive to the authentic simplicity of the family meals. So, It is with nostalgia that I remember the lost bread or the roasted goose on the fire of wood that my grandmother prepared for the great occasions.
In 1982, I started the "Tour de France" of the houses I dreamed of and so I could approach the "Chefs", men of whom I learned everything: Michel Guérard, Michel Rostang, Marc Meneau and Jean-Pierre Vigato.
In 1992, I had the privilege of representing France and its cooking at the Universal Exhibition in Seville (Spain) as chef of the restaurant "Carte de France" within the Pavilion of France.

Since November 1994, I have been managing "Manufacture", a large wellcoming and authentic house where I let my inspiration run free.
In my "little corner of Paris", I concentrated my origins, my memories and I wanted to marry them to all these new sensual, visual, olfative and gustatory emotions that have been mine during my various journeys.
Behind my stoves, I never forget the essential place of the quality of the raw materials without which all the talent of a cook would be pure loss.

Then, I participated in the design and launch of 2 projects in the Paris region : a 4 * luxury hotel in Roissy and the restaurant "l’Appart" Paris 8th while demonstrating at the school of l’école des Cordons Bleu.
